Vegan Brownie
Serve with fresh raspberries
Satisfy your sweet tooth with these deliciously rich, gooey vegan brownies.
Ingredients
- 2 cups chopped dates
- 1 tsp baking soda
- 3/4 cups boiling water
- 200g diced vegan butter
- 4 Tbsp oil
- 2 cups caster sugar
- 1 cup cocoa, sifted
- 1 cup flour
- 1/2 tsp baking powder
- 250-300g of dark ghana chocolate
- Vanilla bean/essence
Method
- Preheat oven to 160°C and line baking tin with baking paper.
- Put dates in bowl with baking soda/boiling water. Stir to combine, adding the fine chunks of butter and stirring until melted. Let sit for 10mins.
- Put in the microwave for two bursts of 20/30 seconds.
- Use potato masher to mash dates until creamy.
- Stir in the oil and vanilla until well combined.
- Stir in the sugar, then add cocoa, flour, baking powder and stir until smooth.
- Add the chocolate chip chunks, stir.
- Smooth into baking tray and pop some chunks of chocolate on top.
- Cook in the oven for approximately 50mins - or until the sides come away.
- Cool well before cutting so it isnt as gooey.
