Watermelon Salad With Goat's Cheese & Mint

Ingredients
- 500g watermelon, cut into pieces
- 1/2 bunch fresh mint, leaves only
- 1/2 red onion, peeled and sliced finely
- 1 tbs lemon juice, freshly squeezed
- 160g marinated goats cheese
- 1 pinch freshly ground pepper
- 1 pinch sea salt flakes
- 2 tbs pistachios, roughly chopped
Method
- In a small bowl combine red onion, lemon juice and 1 teaspoon salt and leave for 15 minutes.
- Finely shred any big leaves of mint, leaving small ones whole.
- Gently toss watermelon and goats cheese together, add shredded mint leaves, leaving small leaves to decorate and then place on a platter.
- Drain red onion, discarding lemon juice, and scatter with pistachios and reserved mint leaves.
- Season with black pepper and serve.
