Whole Turkey With Orange, Macadamia & Honey Stuffing
Make your Christmas Day one to remember with this juicy turkey roast. The orange, macadamia & honey stuffing is one for the books!
Ingredients
- 40g butter
- 1 Tbsp olive oil
- 1 large brown onion, finely chopped
- 200g streaky bacon rashers, finely chopped
- 6 cups sourdough breadcrumbs
- 1 cup roasted macadamia nuts, roughly chopped
- 1 large orange, rind finely grated, juiced
- 3 tsp dried mixed herbs
- 1 cup roughly chopped flat-leaf parsley leaves
- 1 egg, whisked
- 1/3 cup honey, melted
- 7kg Macro whole turkey
Method
- Preheat oven to 180°c. Heat butter and oil in a frying pan over medium heat. When melted, add onion and bacon and cook for 10 minutes or until softened. Transfer to a large bowl and cool. Add breadcrumbs, nuts, orange rind, orange juice, dried herbs, parsley, egg and 2 tbs honey. Season and stir until well combined.
- Fill front and back cavity of turkey with stuffing. Tuck wings under turkey and secure legs with kitchen twine. Place turkey into a large roasting pan and rub with oil. Roast for 3 hours. If turkey should begin to colour too much, cover loosely with large sheets of foil. Remove foil. Pour melted honey into a small bowl, add 2 tbs butter and stir until combined. Brush mixture liberally over turkey. Roast for a further 30 minutes or until cooked through. If turkey should brown too much, cover loosely with foil. Transfer turkey to a large serving platter. Serve with vegetables of choice.
