Chewy Coconut & Oat Slice

Soft and chewy Oat Slice- Perfect as a snack on-the-go or for the kid’s lunchbox.
Ingredients
- 125g unsalted butter, melted
- 1 cup desiccated coconut
- 1 cup quick oats
- 1 cup caster sugar
- 1 cup self-raising flour
- 1 free-range egg, lightly beaten
- 1 tbs honey
Method
- Preheat oven to 160°C/140°C fan-forced. Grease a 20cm (6cm deep) square cake pan. Line base and sides with baking paper, extending paper 3cm above edges.
- Place flour, coconut, oats and sugar in a large bowl, mixing well to combine. Add butter, egg and honey to bowl, then whisk to combine. Place mixture in pan and, using back of a metal spoon, press over base to compact.
- Bake for 30 minutes or until golden and firm to touch. Cool in pan. Slice and serve.
