Have dinner ready in no time with this quick vegetarian recipe which teams sticky, smoky kebabs with a refreshing quinoa salad.

Ingredients

  • 1 cup tri colour quinoa
  • 750g BBQ vegetable kebab kit with smokey BBQ marinade
  • 270g creamy & crunchy salad kit
  • 1 bunch continental parsley

Method

  1. Rinse quinoa. Place in a large microwave-safe bowl. Add 2 cups water. Cover and microwave on high for 5 minutes. Stir. Microwave on medium for 2 minutes. Stand for 2 minutes.
  2. Meanwhile, thread vegetables onto pre- soaked bamboo skewers, reserving marinade.
  3. Heat a greased barbecue grill or chargrill pan over high heat. Cook skewers, turning and brushing with reserved marinade, for 8 minutes or until tender and starting to char.
  4. Place salad kit in a bowl, adding walnuts and feta and reserving dressing. Add quinoa and parsley. Toss to combine. Divide among plates. Top with skewers and drizzle with dressing. Serve.
